After a fun weekend with too many treats and too much fun, I wanted to start this week off with a healthy twist. My new healthy addiction is hummus. I love having homemade hummus in the fridge that I can snack on with vegetables or baked tortilla chips. I love the addition of the roasted red peppers in this hummus. Not only does it make it a beautiful color, but it gives it a whole new dimension of flavors that is perfect in hummus. My kids have even loved taking this hummus in their school lunches. It’s really just a great, healthy snack for your whole family. Not to mention, it is easy-peasy to make. Hope you love it!

Roasted Red Pepper Hummus

Ingredients

  • 3 cans garbanzo beans or white northern beans drained
  • 2-3 Tbs. lemon juice
  • 1 tsp. salt or to taste
  • 1/2 tsp. cumin powder
  • 1/2 tsp. crushed red pepper flakes
  • 4-5 roasted red bell peppers from a jar Mezzetta or other brand
  • 1/4-1/3 cup olive oil

Instructions

  • In a blender (a Blendtec or Ninja can handle this whole recipe--if you have a smaller blender, maybe half the recipe), or a food processor, add the canned beans that have been drained. Puree the beans for a couple seconds to get it going. Then add the lemon juice, salt, cumin powder, crushed red pepper and the roasted red peppers from a jar. Puree these ingredients until the beans are smooth. Add the olive to the hummus and continue adding until the mixture is smooth and soft. Season the hummus with more salt as needed. Serve with fresh vegetables or chips.
