October is one of my favorite months of the year. Not just because it’s my birthday month (ha!) but because it’s the month those Kraft caramels come out and begin making their way in some of my favorite dessert recipes. Caramel is my all-time favorite treat. That’s why for my birthday my sweet sister made a large batch of these Salted Caramel Cookie Bars to celebrate. These bars are seriously scary good! What is not to love about a thick layer of caramel sandwiched between two layers of perfectly buttery, chocolate chip cookie layers? I think I could search the rest of my life and not find a recipe more perfect for me. Homemade chocolate chip cookies and caramel are my two favorite treats. So, if you have a birthday coming up, or you just want to spoil yourself with a treat that is unmatched, this is the recipe for you!

When we’ve made these bars, we have doubled the recipe and put in a cookie sheet (jelly roll) pan. We use the Brown Eyed Baker’s recipe–it’s perfection!
