Back several years ago we used to visit a favorite BBQ place we loved. Since then it has closed, but I still remember how amazing their Wallaby wraps were. Since we can no longer go there to eat this meal, it has become a favorite of ours back at home. The idea is simple for these wraps. You use your leftover barbeque pulled pork and put it in a tortilla with lots of cheese, rice, black beans, lettuce and tomatoes. Roll the whole thing together and serve with extra sauce. The flavors are unusual together (the idea of bbq flavors with mexican) but it works amazingly well! Next time you make up a big pork roast and need a way to use your leftovers, these wraps will soon be a favorite of yours too!
Now, speaking of GREAT BBQ…if you live near Salt Lake City you must try this new bbq joint. It should totally be on diners, drive-ins and dives. It’s a small bbq joint in a strip mall write off the freeway in Salt Lake City. It is called R&R BBQ and it is FANTASTIC!! Have you been there? It is hands down the best barbecue I have ever had, especially here in Utah. Sadly the secret is getting out because it keeps getting more and more busy every time we go. You know I love you, because if I was smart I would keep this secret to myself 😉 However, you need to go there soon if you live anywhere close by. For a brief second you will be transported to Texas where you can get ‘real’ bbq. This place is awesome and the sweet twin brothers that own it are also adorable.
