Chilis Copycat Salsa Recipe

I have to apologize for the lack of blogging lately. My family and I have been hiding from the Utah snow in sunny California. We did nothing but sit by the pool, soak up the sun and eat to our hearts content. Vacationing with my sisters and my extended family is scary for the waistline, but such a riot! You have to mentally know that in two weeks you will gain at least 10 lbs. We always do a large Costco run the day we get to California and then buy a car full of food to feed 30 people for 10 days. It is a blast and you would never believe how much food we get for the low prices (we even used Deals to Meals and price matched some items at Walmart in Temecula–it was pretty slick!) For 10 days my family of 7 ate like kings for only $87–fabulous!!

So, among many meals that we prepared, our favorite new recipe we tried was a copycat recipe for Chili’s Salsa. It was SO simple to make and really was one of my favorite salsas I have had. Since this week we are focusing on using seasonings in our food storage, this recipe is a great way to use a spice that many people don’t use very often, which is cumin. I only started buying this spice a few years ago and it has quickly become a staple in my kitchen. If you have never tried this spice, give it a try..you will love it!
