Bacon Cheeseburger Soup

It was so strange this morning to wake up to such a cold and rainy day. We were spoiled last week here in Utah with beautiful blue sky and sunshine all week. In fact, our family spent Saturday downtown Salt Lake and we were all in shorts and short sleeves. That seemed so crazy to be so warm in November. I guess cold weather was bound to come soon enough. So this morning when I was deciding what to post about it made sense to post a soup. There is nothing like a warm bowl of soup and bread to warm the soul on a cold day.

Creamy Cheeseburger Soup

I found a version of this Bacon Burger Soup online and wanted to switch it up and make it my own. The site said this soup tastes just like a cheeseburger. I would have to disagree. I guess that depends how much you like cheeseburgers 😉 I’m not a huge fan, so this soup to me was just a delicious, creamy potato soup with lots of flavor. The ground beef gives this soup a nice rich layer and the crumbled bacon on top really makes this soup something special. Combine that with all of the vegetables in this soup, melted cheese on top and the whole combination is perfect for this time of year! Hope this soup warms your heart and soul this time of year like it did mine 😉

Bacon Cheeseburger Soup

Ingredients

  • 2 onions diced
  • 12 oz. bacon crumbled for garnish
  • 1 lb. ground beef or turkey
  • 1 Tbs. olive oil
  • 1 1/2 cup celery chopped
  • 1 cup carrots diced
  • 3 cups red potatoes diced
  • 5 cloves garlic minced
  • 1/3 cup flour
  • 4 cups chicken broth
  • 4 cans evaporated milk
  • 1 1/2 tsp. Worcestershire sauce
  • 1 tsp. black pepper
  • Dash cayenne pepper
  • 1 tsp. salt or more to taste

Instructions

  • In a large soup pot, saute the bacon until crispy and golden brown. Remove the bacon from the pot and set aside. Remove the excess grease, but keep about a tablespoon of the grease in the pot to saute the onions. Add the onions to the pot and saute until tender. Then add the ground beef and brown until the hamburger is cooked through. Remove the hamburger and onions and set aside. Dice the celery, carrots and potatoes. Add the extra olive oil to pan and add the celery, carrots and saute until they are tender. Add the potatoes, minced garlic and flour. Saute the vegetables and flour for 1-2 minutes on medium low heat. Add the chicken broth, milk, worcestershire sauce, and spices. Bring the soup to a low simmer until the soup thickens. Add the hamburger and onion mixture back to the pot and cook until ready to serve. Serve with the crumbled bacon and serve.
