Jamaican Jerk Pulled Pork Sandwiches

Ingredients

  • 3-4 boneless pork roast or chops
  • 2 Tbs. Olive oil
  • 3-4 Tbs. Jerk seasoning
  • 2 Tbs. Brown sugar
  • 1 tsp. Montreal Steak Seasoning
  • 1/2 cup orange juice
  • Mango Salsa:
  • 1 mango peeled and diced
  • 1/2 fresh pineapple peeled and diced
  • 1/4 cup cilantro chopped
  • 1 red bell pepper diced
  • 1/4 red onion diced
  • Juice of 1 lime
  • 1 pkg. rolls or buns
  • BBQ sauce or sweet Asian Sauce like Korean BBQ

Instructions

  • Drizzle the olive oil all over the bottom of a slow cooker. Put the boneless pork roast in the slow cooker and sprinkle with all of the seasonings. Pour the orange juice around the bottom of the slow cooker and around the pork. Cook the pork with the lid on for 3-4 hours on high heat or 5-7 hours on low heat. Cook until the pork easily shreds.
  • Remove any pieces of pork fat that you can easily see in the slow cooker. Shred the pork with two forks in hand until the pork is all broken up. Season with salt as needed.
  • While the pork is cooking you an prepare the fresh salsa. Prepare the fruit and vegetables and add to a bowl. Drizzle with the juice of the lime. Toss.
  • Serve the pulled pork on a roll or bun and top with the mango salsa and bbq sauce.

Notes

GLUTEN FREE OPTION: You can serve the pork and salsa over a bed of rice to make this meal gluten free. 
FOOD STORAGE OPTION: You can use freeze dried Thrive Life Pulled Pork and Thrive Life Mangos in this recipe to make for a delicious twist.

Ingredients

  • 2 tsp. salt
  • 2 tsp. black pepper
  • 2 tsp. garlic powder
  • 1 tps. onion powder
  • 1/2 tsp. red pepper flakes
  • 1 tsp. paprika powder
  • 2 tsp. brown sugar
  • 1 tsp. cumin powder
  • 2 tsp. thyme
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cayenne pepper

Instructions

  • Add all of the ingredients together and store in a ziploc bag or Tupperware until ready to use. Will last for 6-12 months.
