This meal is simple. Which is just what most of us Mom’s need on a busy weeknight, right? However, don’t let it’s simplicity make you think this dish lacks in flavor. That’s the great thing about this crock pot meal. The chicken is cooked to perfection in a lemon marinade and then shredded when tender. The shredded chicken is added into a wrap with a creamy tzyaki sauce (yum!) made with garlic and dill. Add some crisp cucumbers, red onions and fresh tomatoes and the whole combination is a favorite of mine. Great for any night you need a quick and healthy meal.
Ingredients
- Chicken:
- 5 boneless skinless chicken breasts
- 4 garlic cloves minced
- 1/4 tsp. dill
- Zest and juice of 1 lemon
- 1/2 tsp. thyme
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1 tsp. lemon pepper
- Wraps:
- Sliced Tomatoes
- Red Onions sliced thin
- Shredded lettuce optional
- Tzatziki Sauce:
- 2/3 cup mayonnaise
- 2/3 cup sour cream
- 2 tsp. dried dill
- 1 tsp. garlic powder
- Zest of one lemon
- Salt and pepper to taste
- 1 pkg. Pita sandwiches
Instructions
- In a 5 quart crock pot, place the chicken breasts onto the bottom of the pot. Zest and juice the lemon over the chicken. Sprinkle the seasonings over the chicken and cook for 3-5 hours on medium heat, or until chicken is tender. When chicken is cooked, shred the chicken into large pieces and keep the chicken in the juices. Season with more salt and pepper as desired.
- Slice the tomatoes, lettuce and red onions into thin strips. Prepare the tzyaki sauce by combining all of the ingredients together in a bowl. Serve the sauce over the shredded chicken, tomatoes, onions and cucumbers in a tortilla or wrap.
