Lemon Grilled Pork Chops with Sauteed Garden Squash

My favorite type of meal in the summer is a piece of marinated meat with fresh vegetables from the garden. It is so fresh, quick and easy to prepare. In the summer heat, I am not intersted in slaving over the stove all day…shocking, I know! I want a meal that I can throw together without a lot of effort. Summer is the time for pork chops to go on sale for great prices, so this marinade for pork is one my mom found and I am in love! The marinade is very basic, but gives a LOT of flavor to the pork or chicken that you are marinading. I like to marinate this pork overnight to give it a lot of flavor! The three tablespoons of lemon pepper seems like too much, but it actually gives just the right amount of flavor. If you want a new summer marinade, give this one a try..it is delicious!
