If you are still up for doing a little grilling in your backyard, these Lemon Rosemary Chicken Sandwiches are so amazing. The chicken is marinated in a lemon and rosemary marinade that keeps the chicken completely moist and full of flavor.Make a delicious cream sauce to smother on the sandwich and you have perfection on a plate. It’s light, it’s simple and full of great flavor for a quick weeknight meal. Better than any chicken sandwich you can buy anywhere! Enjoy 🙂

Lemon Rosemary Chicken Sandwich

Ingredients

  • SANDWICH:
  • 5-6 boneless skinless chicken breasts
  • 1 1/2 tsp. black pepper
  • 2 tsp. rosemary
  • Zest and juice of 2 lemons
  • 1/3 cup olive oil
  • 3 cloves garlic
  • SAUCE:
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 stalks green onions
  • Zest of 1 lemon
  • 1/4 tsp. black pepper and salt
  • 1 tsp. lemon juice
  • 1/4 tsp. rosemary
  • 1/4 cup parsley
  • 2 to matoes
  • 6 slices provolone cheese
  • 6 pieces leaf lettuce
  • 6 hoagie buns

Instructions

  • Place the chicken and marinade ingredients (salt, pepper, rosemary, juice and zest of lemons, olive oil and garlic cloves) into a tupperware or Ziploc bag. Let the chicken marinade for 1-6 hours, or until ready to grill. Grill the chicken on a hot grill until the center of the chicken is no longer pink and the chicken has nice grill marks on them. Once the chicken is cooked through, add a slice of provolone cheese on top of the chicken and let melt. Remove cooked chicken and let it rest while you prepare the sauce. For the sauce combine the sour cream, mayo, green onions, lemon zest, salt, pepper, lemon juice, rosemary and parsley together. Stir sauce and then spread a generous amount of the sauce on each side of the hoagie buns. Place a chicken breast on each bun and top with sliced tomatoes, and a piece of lettuce.

Notes

HEALTHIER OPTION: Serve lettuce wrapped or on a whole wheat bun. Use lowfat sour cream and mayonnaise.
