This past weekend my kids and I spent the day up in our garden winter-izing things. Our garden wasn’t stellar this year, but I was thrilled to find enough cherry tomatoes and fresh basil to make one of my favorite quick & easy recipes. These Margarita Pizzas are something my sister makes for us often, so I was excited to give them a try myself. All you need is some flat pita bread, good olive oil, fresh tomatoes, fresh basil and fresh mozzarella cheese. Those five ingredients create a crispy, fresh, flavorful meal everyone’s going to enjoy. It’s healthy, it’s quick, it’s easy and it uses up the fresh ingredients from your garden. If you need a simple menu idea, give these Margarita Pizzas a try!

Ingredients

  • 5-6 flat pita bread
  • 2-3 roma tomatoes sliced
  • 1 cup fresh basil leaves torn
  • 2-3 Tbs. olive oil
  • 8 oz. fresh mozzarella cheese sliced (or shredded)
  • Salt and pepper to taste

Instructions

  • Lay each pita bread flat onto a baking stone or greased cookie sheet. Brush each pita with a healthy dose of olive oil. Slice the fresh mozzarella cheese and place on top of each pita. Slice the tomatoes and place on top of the cheese. Rinse some fresh basil and break off the leaves and place on top of the tomatoes. Season generously with cracked black pepper and kosher salt. Broil each pizza in an oven for 5-8 minutes, or until the top is golden brown and the bottom crust is slightly crisp. Continue to bake until all of the pizzas have been cooked. Serve pizzas hot.
