Peanut Butter Oreo Brownies

My brother in law came into town the other week, who is obsessed with peanut butter and chocolate like my husband. I knew I needed to come up with a new peanut butter treat to make there stay a little extra special. So, I decided to mix our three loves: Oreos, peanut butter and chocolate. What’s not to love about that combo? The results were phenomenal! These bars were thick, chewy, gooey and everything I want in a dessert. The big pieces of Oreo cookie were a really fun addition to these bars. If you love peanut butter like we do, you will want to make these the next time you’ve got a craving for peanut butter.

Ingredients

  • 1 1/2 sticks butter
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 cups flour
  • 15 Oreo cookies crushed
  • 1-2 cups peanut butter chocolate chips or mini peanut butter cups

Instructions

  • Preheat oven to 350 degrees. In a mixing bowl, with an electric mixer, whisk together the butter, peanut butter and sugar until light and fluffy. Once the butter and sugar are creamed together, add the eggs, vanilla extract, baking soda, baking powder and salt. Continue to mix until combined. Then add the flour and mix for a minute. Add the Oreo cookies to the batter and mix until the Oreos are mostly crushed and combined. Keep the Oreos in somewhat large pieces for better texture. Spray a 9x13 pan with cooking spray and press the batter into the pan evenly. On the top of the bars, gently press into the cookie bar the peanut butter chocolate chips. Bake the bars for 18-20 minutes, or until the center is set up and no longer soft (don't over bake or they will dry out). If you want more peanut butter and chocolate on your bars, you can melt a little creamy peanut butter and drizzle over the top. You can also drizzle the top with melted chocolate if you wish. They are great without it, so take or leave that extra step ?
