On a busy night one of my favorite go-to meals is a quick, warm, flavorful sandwich. These sandwiches will fill you up with all of the meat. Tender sliced turkey, crispy bacon and lots of your favorite toppings. Next time you need a quick meal, give these Turkey Avocado Bacon Sandwiches a try.
- 1 lb. bacon cooked and cooled
- 8 slices turkey lunchmeat
- 2 to matoes sliced
- 2 avocados sliced
- Spinach leaves
- Cheese sliced optional
- In a saute pan, on medium-high heat, add the bacon and lay it out thin. Cook the bacon until golden and crispy. Turn the bacon over to the other side and cook until all sides are crispy. Remove the bacon and place on a paper towel to drain. Slice the tomatoes, cheese and avocados. Arrange sandwich with toasted bread, mayo, cheese (optional), avocado slices, tomato slices spinach and bacon. You can cook the sandwich in a panini maker or serve cold.
