Breakfast Mushroom Strata

Ingredients

  • 2 Tbs. butter
  • 16 oz. fresh or freeze dried mushrooms sliced
  • 1 red onion diced
  • 1/2 cup white cheese
  • 1 Tbs. Montreal Steak Seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 12 eggs
  • 1/2 cup milk
  • 1/4 cup feta cheese
  • 2 Tbs. fresh parsley chopped

Instructions

  • Preheat oven to 350 degrees.
    Slice the mushrooms and dice the onions. In a saute pan that can be cooked in the oven (like a cast iron skillet), add the butter and turn the stove to medium-high heat. Add the sliced mushrooms and onions to the pan and let saute until tender. Add all of the seasonings to the mushroom/onions.
    In a mixing bowl and with a whisk, whisk together the eggs, milk, feta cheese and fresh parsley. Pour this egg mixture over the mushrooms and onions in the hot pan. Sprinkle the white cheese on top of the egg.
    Place the pan in the oven and bake for 20-25 minutes, or until the egg mixture is cooked and the top is golden and bubbly.
    Remove from the heat and garnish with fresh parsley and serve with your favorite salsa or sauces.

  • 3/4 cup Thrive Life Freeze Dried Onion
  • 2 Tbs. water
  • 1/2 cup Thrive Life Mozzarella Cheese
  • 1 Tbs. Montreal Steak Seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 3/4 cup Thrive Life Powdered Eggs
  • 1 3/4 cup water
  • 1/4 cup Thrive Life Powdered Milk
  • 1/4 cup Thrive Life Parmesan Cheese
  • 1 tsp. dried parsley

Instructions

  • Preheat oven to 350 degrees.

  • Place the pan in the oven and bake for 20-25 minutes, or until the egg mixture is cooked and the top is golden and bubbly.
  • Remove from the heat and garnish with fresh parsley and serve with your favorite salsa or sauces.
