One thing that has actually grown really well in our garden this year is red potatoes. The kids love to go up to the garden and go on a ‘potato treasure hunt’. They are so fun to dig up and find all these beautiful, red potatoes under the soft dirt. With a little rinsing and this simple recipe, you can turn your red potatoes into a really flavorful and easy side dish. These potatoes go perfectly with our homemade meatloaf and any other main dish you can think of.
Ingredients
- 1/4 c. olive oil
- 1 1/2 T. lemon juice preferably fresh
- 2 t. garlic powder
- 1 t. dried thyme
- 1 t. dried rosemary
- 1/4 t. salt and 1/4 t. pepper
- 1/4 t. dried oregano
- 2-3 lbs. red gold or russet potatoes (keep peel on)
Instructions
- Preheat oven to 400 degrees. Combine all of the ingredients except the potatoes together in a large bowl. Stir to blend well. Add the cut potatoes to the seasoning mixture and toss to coat. Transfer the potatoes to a large cookie sheet or baking stone. Spread them out into a thin layer. Bake until the potatoes are golden browned and tender, about 35-40 minutes. Flip the potatoes halfway through cooking.
